Mini baskets frico with risotto and apple brandy
Ingredients (for twenty mini baskets)
200 gr Montasio stravecchio
200 grams of Montasio
10 tablespoons seasoned rice quality Carnaroli
an apple soda
butter salt and pepper 1 small glass of grappa
1 liter of vegetable broth
Method: Grate the
two types of cheese in a pan placed a piece of parchment paper, put the gas on low flame and add two tablespoons of grated cheese, trying to form a circle. When the cheese has melted, then remove the veal roast with a knife and put it on the back of a glass upside down, in order to obtain small cups. Repeat until all the cheese.
For the risotto, peeled and cut apples into small cubes, sauté in a pan with a knob of butter. Add the rice and toast it for a while, then sfumatelo with grappa. Pour a ladle of broth and continue cooking incorporating the stock one ladle at a time, until almost cooked. Once ready, remove from heat and add a knob of butter, stirring vigorously. Using a spoon pour the risotto into bowls, and pepper and serve hot.
